FLAPPER PIE

COMBINE THE FOLLOWING AND PAT INTO A PIE PLATE.
BAKE 375 DEGREES FOR 8 MINUTES.

1 1/4 cups graham crumbs
1/3 cups soft or melted butter
1/4 cup sugar

In a saucepan combine together the following and boil 5 minutes.

1/2 cup sugar
2   tbs cornstarch
1 tbs flour
1/4 tsp salt
2 cups milk

Combine and mix in a separate bowl,

2 egg yolks beaten
1 tsp salt
1 tbs butter
1 tsp vanilla

Ladle ½ cup of the hot pudding into the egg yolks and whisk rapidly. Repeat two times. Now add the egg yolk mixture back to the saucepan. This tempers the egg and helps to prevent curdling.

Cook a minute longer and add butter and vanilla.

Cool 10 minutes and pour into crumb crusts. Cool to to room temperature and let set at least 3 hours.

MERANGUE

2 egg whites
1/4 cup sugar

Beat into peaks. Spread over cool pie and bake 425 degrees.
