This is the  recipe for the delicious zucchini bread Betty
brought made from zucchini's from her garden.                              
                               
                      Ingredients:

3 C all-purpose flour               1 C vegetable oil    
1 tsp salt                          2-1/4 C sugar
1 tsp baking soda                   3 tsp vanilla
1 tsp baking powder                 2 C grated zucchini
3 tsp ground cinnamon               1 C chopped walnuts
3 eggs
 
Grease and flour 2 8x4 inch pans.  Preheat oven to 325.

Sift flour, salt, baking powder, soda and cinnamon together
in a bowl.  Beat eggs, oil, vanilla and sugar together in a
large bowl.  Add sifted ingredients to the creamed mixture 
and beat well.  Stir in zucchini and nuts umtil well combined.

Pour into prepared pans.

Bake 40 to 60 minutes or until tester comes out clean.  Cool
in pan for 20 minutes.  Remove and finish cooling.
 
I had only a 9x5x3 inch pan so reduced ingredients by 1/3.  
Also used half oil and half applesauce.  It took slightly 
longer than an hour to cook at 325.  (maybe 10 minutes more)
